Salsabration

Alex and I are intelligent individuals. Really. But for some reason when we are together and the conditions are right, we can do some really unintelligent things. Over the summer we were pretty sure that the only way to break a coconut open is to drop it from a very high point - like our attic apartment window out onto our driveway. That's how monkey's do it, right? (I literally said that to Alex, and he agreed with me) This is the caliber of catastrophe that we're talking about here. I had to shield my face because there were coconut shards flying all over our yard.

Last week I got all of the ingredients in my Bountiful Basket to make salsa verde. We were trying a new recipe that instructed us to boil all of the ingredients on the stove, transfer them into a blender, and blend IN BATCHES. Blend in batches? Why is that necessary? It's only about a pint of salsa and fills maybe 1/3 of my blender. I don't think that we need to do it in batches, I think we'll be good. Poured it all into the blender, started putting the lid on, had a little opening on the lid but figured that wouldn't be a problem. Pressed blend.

EXPLODED!

Not kidding, I have never seen anything like it. These pictures do not do this any justice. The salsa flew up, the pressure knocked off the lid and my hand, salsa flew everywhere! My hands, my face, my shirt, my pants, alex's computer, the counter, the cabinets, the rug, the floor 6 feet away. We have been pretty casualty free in our kitchen so far, but this one seriously topped the charts. And, it was hot! So hot! Burnt my hand!

We laughed, mopped it all up, wiped everything down, talked about blending in BATCHES, but jointly concurred that wasn't necessary. Like I said, the definition of group think...intelligent separately, not so intelligent together sometimes. We figured the problem was just that the lid wasn't on tight enough. Closed the lid all the way, barely pressed pulse.

EXPLODED...AGAIN!

Mopped it up, again, and decided that we better blend in batches. Go figure. No kidding, there is a 1/4 cup in the blender and it almost blew the lid off again. Alex had to hold the lid with both hands while I pushed buttons because the pressure was too much. I've googled it since and indeed, blending hot liquids is a bad idea. We're talking chemical reaction. Now we know.

We finished the salsa, tastes awesome, and will definitely make this recipe again. But next time, although we always love a good salsabration, we will be blending in batches from the beginning.

Little update...

I typed our blog address into my internet and it didn't pull up - that's how long it's been since I've even looked at this blog. Readers with any interest in our lives at all have most likely given up on us months ago...I would too.

But guess what, school is back in so I need an excuse to not do my homework. Literally. So here I am, 3 weeks into the semester and I suddenly feel the urge to update my facebook and blog - what an appropriate time.

So here we go, a top ten list of some highlights that've happened since my last post...

Cruise to Mexico for Spring Break! So fun. Carnival was a little trashy, people were a little crazy, but overall it was an awesome trip that was so worth it.

Alex ran for office in the spring - ASUSU (like SBO) Vice President of Athletics. He won! Campaigning was absolutely insane. We had tons of support from great friends and family and definitely couldn't have done it without them. I have to brag a little...He won by a landslide! Had the most votes in the entire election, more than any of the other offices that other people were running for! In primaries you could have combined the votes of the two guys running against him...and he still would have won! So proud of him. He's now serving as the Athletics VP and loves it. Crazy busy, but is doing a great job and it has been a great experience for him.

I taught an English class for international students (which is what my Master's degree is in) and absolutely loved it. Love the students, loved the interaction, loved the experience. Positive all around. I'll finish my Master's in May and will hopefully be able to teach a class like this again in the future.
Al graduated! Yeah! I'm so proud of him! He started his MBA this fall here at USU and will finish in the spring - we'll walk at Master's graduation together!

www.bountifulbaskets.org - changed my life. Order on Monday, pick-up throughout the state on Saturday, $15 for all of that fresh, yummy, produce. Love it.

I don't have any pictures really because we had Melissa shoot everything...but we had a wonderful trip over the summer to New York to visit my sister and her family. Had an unforgettable time and now miss those guys more than before!

Summer was filled with lots of swimming, eating, bbqing, moving, cleaning, playing, and gaming with friends. Being back in school has been more than difficult, but just one more year - we can do it!

Us at the football game last Saturday...

My creative sister

Ok, actually they're all creative...This one's a graphic designer though! She's designed all of the wedding and baby announcements in our family and has now moved from freelance to starting her own business. Melissa's design teamed with my mom's custom calligraphy makes some of the classiest invitations I've ever seen. Check out her website - you'll be impressed, promise.

ASUSU Athletics VP

He made it! Thanks to all of our friends and family that helped so much with our campaign. We're so lucky to have the support network that we do and don't know what we would do without it. Go Aggies! Go Alex!

Alex for Athletics VP!

It's elections time at Utah State and Alex is running for Athletics Vice President! If you go to USU we'd love it if you got online and voted for him at vote.usu.edu. Primary voting ends on Friday and Finals voting goes from Monday to Wednesday. Alex would love to win (obviously...) and we know he'd do a great job. If you don't go to USU please spread the word to anyone you know who does go here!

Prayers for Patience

This post is on behalf of some dear friends of ours - Scott and Tara Pearce in Kaysville - and their dear family's efforts to adopt a 14 year old girl from Ghana. Patience lives in an orphanage in Ghana and the Pearces are working their hardest to bring her to their home. Patience would be the 3rd girl that Pearces have welcomed in to their family and we are praying along with them that their efforts with Patience will fall in to place.

Please visit their blog: prayersforpatience.blogspot.com, where you can donate to their cause.

My Poster.

Holy cow - this is exciting. Follow me on this journey...Three years ago when San Jose State came to play in the Spectrum I had a really clever idea for a poster and told myself that next year I'd bring it to the game. The next two years, same thing - no poster.

Well I am happy to tell you that this last Saturday San Jose State came to the Spectrum once again. I bought the poster board. Used my idea. Took it to the game. I was ready for 'em!

As excited as I look in this picture above, this doesn't even capture the full effect - definitely on my list top 5 greatest Aggie games ever...

Cool huh????

And we're back...

But excited about it for sure!

Christmas break definitely ended way too soon, but we're happy to be back in the swing of things. We had a great holiday full of yummy food, crafts with the Hales, and movies with the Putnams...We love our family(ies) and can't wait till we see them all again.

One more semester just means one step closer to the end, right? Right. Alex and I are both excited for our spring schedules but we're definitely spread a little thin...For Al, work is at WestHost in Providence where he does technical support for websites and loves it. This is his last undergrad semester and he'll graduate in Information Systems in May (yeah!) before he begins the MBA program here at USU (hopefully). He loves his fraternity, SigEp, and is working hard as the EQP in our ward. I (Whitney) am in my second semester of my Masters in Second Language Teaching and love my classes so far. I am also teaching an English course for ESL learners at USU and am enjoying being called, "Professor." :) Work as a USU Recruiter for the Admissions Office is going well and I am enjoying serving our ward as the RSP.

Like I said...spread a little thin, but definitely for a bunch of worthy causes! The magic day is May 6th, 2011 - when we will walk at graduation together with our Masters - and we'll just keep busting our butts until then. Until next time -
